A man cannot step into the same river twice, because it is not the same river, and he is not same man

What is the name for this idea that you are not the same person you were a minute ago? Some Greek philosopher described it.

Heraclitean flux

That's who OP is quoting.

Was he wrong? Water, electrolytes and neurochemicals are constantly circulating in the brain. The person you were a minute ago is now completely changed in form.

I've got two feet. Pop one foot in the river then quickly put the other one in before the river and the man (me) can change. Problem atheists?

Ship of Theseus. Obviously there is a transcendent element explained by the adding of the time axis and interaction with an idea of the river, and the man
The Euphrates is the Euphrates because it is a gestalt of many element, not solely because of a snapshot of the molecules of water and silt flowing through it or the snapshot location of its river bed in the moment. The man isn't only the chemicals in his brain somehow discerned in a snap of time, either, or by the flesh his nervous system wears, because it is ever changing.

temperature is a measures of the average kinetic energy of molecules vibrating and colliding in a substance
you could take the temperature of water, let's say at room temperature, but some molecules in the water are "hotter" than what the temp says and escapes, they slowly "evaporate" just like it would when boiling the water only in smaller amounts
no matter the instrument or method temperature is never actually accurate
so do you want a useful term like temperature or some lengthy explanation for everything in life? are you on average the same minute by minute?

Heraclitus on doctors (note this goes double or triple for plastic surgeons and gender reassignment/ any cosmetic surgery not based on life threatening ailments).

Heraclitus believed in the soul. In fact he believed the universe was one soul (logos) divided a million ways constantly changing itself until eventually it would return back to a single identity.

So silly
Suppose there's nothing such as a soul or essences. Totally made-up!
You going to become a new man every time you step into a river now? Of course not.

A man can’t wipe his ass twice, because it’s not the same shit and his asshole is slightly more loose every-time he takes a shit

Heraclitus didn’t literally believe you were a new man but a permanently adapting soul. A soul can exist permanently within a state of change.
