When Muslim conquer non-Muslim lands:

Non-combatants are mostly left alone, non-Muslims are well integrated into the state as propers citizens and even become proeminent figures within it such as bankers, advisors to the state, merchants, farmers, etc

When judeochristians conquer non-judeochristian lands:

The conquered are completely massacred, non-combatants are targeted, genocides and ethnic cleansing follow to the point the original inhabitants are completely erased, their lands given to white judeochristian settler colonizers

Meanwhile the Ummah codified a proto Geneva convention in the Middle Ages
