Why was France unable to convert and assimilate the Algerians despite ruling parts of it (and especially the populated coast) for over a hundred years?

First of all they fully conquered the northern coast/northern region by 1870 and then they went on till 1905 to conquer the rest and Algerians were treated as second class citizen and they didnt liked the french for all of their massacres and stuff

Because they didn't want to create problems with the locals just yet and Algerians were still Abrahamics, so they couldn't pull the shit they pulled off against pagans and Dharmics. Also assimilation is a meme because your status could be stripped or curtailed at any moment.
