Because the purpose of marriage was to produce children. Older guy and younger woman can make a child with out a problem. While a younger man and older woman might have problems, since woman turn infertile faster than man. Now there are some pairing where the woman was older, Eleanor of Aquitaine was older than her second husband, and I think that at one time in Japan it was common for emperor's first wife to be older then him. This doesn't mean that people were only attracted to young woman, Romans had a thing for woman who gave birth.
