Easy, they just ignore it. They don’t even really spend a lot of time focusing on the Old Testament, many Protestant congregations spend most of their time studying Paul’s letters and teachings.

The slightly more clever ones will say, "that's in the Bible, it says the Israelites were worshiping other Gods which made the real God angry!" and just ignore that the historical evidence shows that Jewish polytheism predates monotheism which is the opposite of what the Bible says.

It's not Polytheism, by the time most of the Old Testament was already written the ancient Israelites were closer to Monolatric than true Polytheists, in fact to some degree they may have even been closer to Henotheism than Monolatrism, as Yahweh was understood to mostly be the God of the ancient Israelites as opposed to other peoples who had their own God(s)
