What is the evidence they actually wrote the Gospels? The main argument, that certain people claim traditional authorship who knew someone who knew one of the four evangelists (such as Irenaeus), is incredibly flimsy since they don't claim that's where they got their authorship information from (especially when you take into consideration that Irenaeus explicitly claims that it was an apostolic tradition that Jesus lived until his 50s).

There's none. Christians have always had a tendency to ascribe total certainty to things just because they want to believe.

Wrong question
The question isn't who wrote it, but whether it is Divinely Inspired or not

We have books in the OT saying how the prophet died or went to heaven, therefore it's not them who wrote the book but they are still accepted because they are Divinely Inspired

Divinely Inspired means that it must not contradict a single verse in the previous scriptures. No errors, no contradiction.

A smooth flow of stories written in a span of over 2000 years without a single plot hole or red herring. Every piece is vital for the conclusion.

And by every piece, I mean, Genesis remain relevant all the way to Jesus i.e, New Adam, Spirit of the Lord, OUR image, and crushing of the serpent's head under the heel of Eve's Seed (not Adam)

The Bible is an anthology of books, very old books, all of them initially told and later written for centuries until 1453

Imagine this situation, a 1st Jack wrote the book of Genesis, story that someone told to him, after wrote it, he passes the book (actually, a Papyrus) to someone else to copy it and repeat, but this 2nd Jack forgot add a line, and after finish he did the same

A 3rd Jack copied wrong a some words
A 4th one got the 2nd copy of the 1st Jack and added some lines
A 5th Jack saw the version of the 3rd one and compared it with the version of the 1st one and thought that the 1st one was copied wrong, so he change it

This, with every book, every line, and every word for at least 2000 years

Things were added, eliminated, changed, miss translated, both intentionally and unintentionally

And I'm not considering cross contamination with other religions

Says who? A lot of these stories are just retelling of Egyptian or Greek myths or inspired by them.
