That's not what Matthew 27:25 says. Verse 25 tells us what the crowd shouted out, while verse 24 tells us what Pilate said. Try not to get the two confused as you seem to have done. See the two verses in context below:

"When Pilate saw that he could prevail nothing, but that rather a tumult was made, he took water, and washed his hands before the multitude, saying, I am innocent of the blood of this just person: see ye to it.
Then answered all the people, and said, His blood be on us, and on our children." (Matthew 27:24-25)

It makes sense that they would say that in front of Pilate because he was reluctant to allow the execution of what he called a "just man." They wanted Jesus to be killed so much that this was their form of insisting or doubling down on their insistence that the Lord should be killed. They could do that by taking the full responsibility.

If you think the logistics of crowd members shouting something is hard to believe, then obviously you'll have much bigger problems believing the miracles mentioned elsewhere in the Bible.
