Many of our behaviours are so not because they are bad in themselves but because of implications and adjacent things, in our societies cannibalism is heavily associated with violence and dessacration, our abrahamic morality make us see our own body and flesh as bad so consuming it cant be any good either, but even with that out of the way cannibalism can only come from violence, if someone dies of old age their meat would probably be shit so no one will want it, if they die of sickness then well, they are infected, this only leaves people who die by accident, and for them I would imagine the necropsy ruins the meat, and if precautions to keep the meat good were it would add to the cost, everything considered you see how there isn't a reliable way to get human meat without violence for a acceptance of cannibalism to develop
