What's the point of this if G*d(Yahweh(Buddha(Allah))) can see everything anyway?

Don't try to make sense of Judaism.
It's a collection of historical rites that won't survive modern scrutiny.
It's like when Christian philosophers try to prove God's existence by using a definition of God as effortless and generic as possible

It's a superstitious chassidic minhag (custom/ritual) that is not halachically significant. Rabbi Yosef Karo, the respected Sephardic scholar that codified the Shulhan Arukh, warned against it. Nachmanides called it idolatrous. In the wider scheme of Yom Kippur, many Jews in the know substitute the chicken with coins & currency, waving it and handing it to the poor and those in need.
