There are supposedly over 7000 languages in the world, but I can never find a list of languages that have over a hundred languages at most, especially ordered in total number of speakers.
What's up with this? Is the 7000 number bullshit?

Depends on if you count languages no one gives a shit about like dialects, dead languages, creoles, sign languages and constructed languages.
Could range from there being like 500 languages to 10,000.

no, many super special languages in sub-sahara africa, they are all very real
one thing people need to understand is that our perspective is warped, largest population groups in the world like europe, east asia, had homogenizing monocultures for centuries upon centuries trying to stamp out special languages, they mostly succeeded, just imagine the italian peninsula in the 5th century bc, is is about 1:100 less people than now but 10X more languages
