Diet matters to a point. You can get a healthy caloric intake eating a 16oz steak cooked in beef tallow everyday, but you're going to get high cholesterol doing that.

For weight loss or gain you can just eat whatever but for fat loss it is ideal to eat a certain amount of protein everyday to spare your muscle. For performance you need a certain amount of carbs and fats as well. For each person there are different levels so I you need to experiment but I wouldn’t say the food doesn’t matter at all
