People work for uber or grub hub for slave wages rather than apply for unemployment, which counts them as "employed" by technicality. This is the same reason why the BLS keeps having to reduce job counts. People are creating 1 man companies so that they can more reasonably file their taxes for their gig work, which otherwise gets very complex.

Labor force participation is hitting record lows and the people who would be working lower end or entry level jobs are instead not in the labor force, raising the official median even though people generally aren't making more money.

True that ICE isn't helping get middle class jobs back, but if you ask the 35 year old working a McDonald's cash register if he would rather work at a meat packing plant for double his current rate he certainly would.
I know you didn't say this, but when people claim that Americans don't want these jobs, it just shows that they've never worked a day in their life and never had to genuinely worry how they were going to buy groceries this week.
