East asian americans will be first generation, speak almost no english, and will still legally change their name to something like "Justin" or "Ben"

Meanwhile jeet americans will be 4th generation with names like ranjeep patel or whatever

why the difference?

They don't change their legal name, but they do adopt an English name.

Im married to a Korean and we agreed that our child will have an Anglican name (legal) and a Korean and Hebrew name for around the house/community.

Meanwhile my cousin married in Indian and they're naming him Rahul Jeet or some shit. I can't express to you how disappointed I am that he rolled over like such a pussy on this.

Maybe a religious thing; most East Asians in the US are Christian or atheist and therefore don't mind using Christian/Western names, whereas South Asians are mostly Hindu or Muslim.

Yes, the ones I've met still go to the temple or mosque, though they're usually not too hardcore about it. I think Indians in the Caribbean also held onto their religion, even after they gave up their language.
