Niet, it's MSG. Ajinomoto creates this flavor almost exclusively. It's why everyone fawns over Japanese food because it's doused in MSG. I think Japan is proof that you can have a garbage diet and not get fat if there's no added sugars, because their food isn't very healthy, but it also lacks sweetness.

You absolutely can if you put oil or butter everywhere.

You are correct, but oils/fats aren't particularly common in Japanese food either since they import most of their food and producing oils/fats is more trouble than its worth for them. You can't get fat off just MSG and simple carbs even if it is a trash diet, you'd have to eat so much more than if you were to get fat off potato chips or candy.

"wow, I boiled random food material and that's savory" perception isn't special and specific to our culture.
many of both western and japanese ancestors didn't know how even "taste" works.
It was only the scientists that analytically built the theories and the mainstream one of the Western academy at that time, which got proven incomplete later, was as reasonable as the claim made by the Japanese academy.

This is the greatest simple food in the world. I know you won't believe it, but it is. Just adding Kikkoman soy sauce makes it extremely delicious and addictive. With one experience, you will understand what Umami is all about. TKG is a great introduction to the concept of Umami.
