that's the problem with most foreigners they never tried actual paella
the real paella has rice, chicken, rabbit, beans, snails, tomato, paprika and azafran and pretty much can only be eaten in Valencia, foreigners eat rice with shrimps in Barcelona and think they're eating paella
but that dish aside personally i would reccomend chuletón de rubia gallega (best beef in the world), jamón with tomato oil bread is a given in any meal, pulpo a feira (same case as with paella, it's only good in it's region Galicia), cachopo, spanish omelette, patatas bravas, cocido madrileño, bull tail, chochinillo asado, migas de pastor (lamb)...
to name a few, basically if you love meat and don't follow retarded religions Spain is paradise for eating any kind of it ideally you would have churrasco (what Argentinians copied from Galicia and renamed to asado) and try a bit of every meat
