cured meat tastes like dog shit though. you need the maillard reaction or it just sucks to eat. i bought a pack of jamon iberico in spain for like 15 euro from a consum and it was a complete letdown. my girl didn't even want to finish the pack that we bought. maybe i'll try frying up some jamon iberico next time and seeing how it is. the ham they served at breakfast places i went were all kinda mid too (airport lounges, hotel breakfasts)
