All kinds of seafood, which makes sense, since it is a nation of islands. Sinigang na hipon (tamarind soup with shrimp and vegetables), for example. Lots of stuff with cuttlefish ('pusit'). Whole roast bangus/milkfish on a plate with rice and kalamansi (small tropical lime) slices.

It's not the same kind of thing. Food in the Philippines has a specific set of local ingredients that aren't used in the same combinations anywhere else.

Italy has lots of really good calamari, but something like inihaw na pusit (grilled cuttlefish) isn't the same, because cuttlefish in the seas of the Philippines are different from those of the Mediterranean, and because it is stuffed with local vegetables, because of the dipping sauce, because of the greater emphasis on rice as a side-dish, etc.

Dinuguan and balut both taste fine to me. Balut tastes like liver and cartilage and chicken meat mixed together, which some people don't like. But I enjoy it. Another thing I really liked was crispy pata/fried pig feet. I loved to chew on those things.

Ensaymada, Shiopao, Bicol Express, Sisig, Menudo, Pancit Molo, Laing, Lechon, Asado, and Kinilaw are good too.

I like eggs, so I always liked to buy different kinds of eggs from vendors and small restaurants. The balut guys usually had buckets with warm sand to keep the eggs hot, and I tried everything they sold. The fried/battered eggs are also really good.

I did eat a lot of blood and meaty foods, because I like to have protein. I ate a lot of chooks/chickens from vendors at bus stops, and also organs like isaw. I ate a lot corn that people were selling near bus stops, too.

I didn't really try as many desserts, because I ate a lot of halo-halo, and that became my favorite. And Dewberry cookies.
