i made a square of maille in 12ga and shot it with a 22 and it didn't damage anything. The rings were tight enough that the lead bullet got caught between them and stopped.

That doesn't account for the energy that a human body will absorb from the impact.
Even if the body armor stops the bullet from penetrating the skin it doesn't mean that the person wearing it won't get severely injured.

Y'know, I'm a locksmith, and one of the things I order in bulk are key rings. I've been mulling over the idea for years of just making a chain mail coif out of them for funsies. No practical reason, just seems like a fun thing to do.

Chain mail on its own, probably not. Chain mail over the thick quilted gambeson that knights would wear to absorb blunt impacts probably would defeat a 9mm JHP, or at least reduce its penetration substantially.

It's the same force that the shooter experiences as recoil, just over a slightly shorter time frame and more concentrated area. If you spread that area out with chainmail or kevlar you might get a bruise but it's not going to knock you over.
