I want to get into mecha anime a bit more after watching Evangelion, Gurren Lagann, Code Geass, Gundam 0079 and Baldios, but I'm having a really hard time with classic monster of the week shows like Voltes V, Dai-Guard, GaoGaiGar etc
I watch one episode a week and pay attention, but each episode feeling so similar and the characters never developing really kills my interest, although the fights are exciting the actual story and characters are never intriguing enough for me to really care
But in some shows, like Space Dandy, I really like the format, so I don't know why I can't into mecha anime like this

Not all MotW shows are of equal quality. Space Dandy is a great example of using that format in the way it really should be used, it's trying to be as off the wall and creative as possible with every episode feeling like it could have come from a different show.
The mecha shows that come closest to being like Space Dandy that I've seen are Goldran and Ganbaruger. They're not quite as good, but they've certainly got a lot of screwball WTF episodes that still make them very entertaining

MotW is also pretty good for mystery type stories. Try Big O season 1, Braiger or Digimon Ghost Game. It's always really cool when a show can make every single episode have a complex plot rather than dragging out one plot over the course of an entire show, and the atmosphere of these types of shows is always just incredible.

OK so first, make a list of absolutely everything you want to watch, do this sober
Then get really, really drunk
Without letting thoughts of her creep in, now make a list of the things you want to watch, but your drunk mind will make it so you only have what you're actually interested in
This is foolproof and guaranteed to work not a guarantee
Seriously though it sounds like you're watching all sorts of random suggestions instead of whatever you actually want

If you don't enjoy watching the characters and mechs destroying stuff, solving problems, and interacting with each other every episode then maybe mecha just isn't for you. Don't force yourself. Its okay to not like things.

Try some OVAs. They're usually really short.

50 episode shows aired weekly so try actually just watching it weekly and see what happens. There are some shows that long that does have more development like Eureka 7. There's also really short animes now.

Monster of the week is an acquired taste. Not many people can tolerate repetitive 50 episode series unless they grew up with that kind of thing. Most love for 70s robot shows come from Italians who grew up with them, and most love for the Brave series comes from Transformers fans (which is why I like them). You can play SRW (it reduces plenty of old super robot series to their core elements and makes them part of a larger story) and stick to more continuous real robot shows and shorter shows like the Getter Robo OVAs, which is what most people do.

I don't think it's an acquired taste or a "you had to grow up with it" type thing so much as it is a willingness to appreciate that different shows may be good in different ways. MotW shows are able to do things that more heavily serialized shows don't have the time to do, and they also by design can never have frustrations with slow pacing and/or inconsequential development since that's the expectation going in
Realizing this is what got me to really embrace them

Like I said, I appreciate some MOTW shows where different things happen each episode like Cowboy Bebop or Space Dandy that have no overall story, but other times I just find it structurally similar and that's when I drop them

Yes, you know you're going to get a giant robot battle with a MotW mecha show every episode, that is the point. But that battle doesn't play out the same every episode, nor does the context surrounding it, even in shows chock full of stock footage
Ganbaruger I mentioned above is a followup to Raijin-Oh and it is like 10x better than Raijin-Oh despite being identical to it most ways. And it all came down to narrowing the scope to just three characters and having more unhinged episode plots
