yeah it can be tricky, the way I do it is: paint everything with a basic skin tone; sometimes I add pink, hull red, or light skin tone depending on how dark or light I want it. then I paint the eyes and eyelids in a mix of hull red and pink and fill in the eyes themselves with light flesh or an off white. then I dot the eyes with the color I want using a toothpick just so I know where to paint them in with the brush. if you mess up it's easy to use the hull red/pink mix and side of your brush to fix any over spill. then it's just a matter of mixing basic skin tone, light skin tone, and pink to add in highlights. the really annoying part is the final step; glazing, as you can't even tell if you did anything until the 4th or 5th layer.
this vid is of a bust but it's pretty helpful to get an idea of how to go about it. and if you ever don't like the face just use acrylic thinner to strip it. also if you don't care about re-priming the figure, use lacquer thinner or super glue debonder to strip everything.
