Shoefitter is a new detail that comes from that 0080 manga, essentially it's a special role as the chief computer programmer for the prototype MS learning computers. The F90FF in-universe article talking about MS computers briefly mentions the term. In any case, the manga also tells us Christina had dreams of being a fighter pilot, but graduated not a pilot but as a computer programmer (not that the Federation would have had any MS pilot program in UC0078 anyway) and assign her to a MS development and research group that would eventually work on the Gundam NT1, although they note that she seems to have good piloting skills anyway (the group happens to have a few captured Zeon MS they occasionally use for data-gathering, mock combat, etc)
The manga is about the NT1 project's early development on Earth before it was shipped to Side 6 in the OVA. Christina is the "shoefitter" for the NT1 project, and the project has a hilariously awful start. The NT1's original test pilot was some idiot who was even worse at piloting than Christina was and almost caused a friendly fire incident. He was taken off the job but the replacement test pilot turns out to be a Zeon spy. Christina becomes the project's third test pilot.
