Can I watch the One Year War OVAs (08th Ms Team, 0080, 0083, Origins) and Char's Counterattack right after I'm done with Z Gundam or is ZZ an obligatory watch as well?

OVAs were made after CCA so they are not necessary, watch them whenever.
Watch ZZ before CCA. It's immediately after Zeta, ties up loose ends and sets the political landscape of the UC on which Char acts upon.

It depends entry by entry but I think with the side stories it's not so much that the core UC storyline is obligatory to enjoy them as it's there are aspects in the side stories that can alter the experience of the core story.
That's not to say there isn't a lot more to appreciate if you have watched 0079 through to CCA but if I think UC as whole wouldn't be to someone's taste but they'd probably like The 08th MS Team then I'd still recommended it.
But for you, yes, watch ZZ before CCA

ZZ arguably matters more than Z aside from the few episodes where Quattro and Amuro interact

Most people in Japan only watched 0079. Only Americans act like Zeta was good or popular

Zeta is popular with the actual Gundam fans, which is why it feels like it has such a strong presence in Japan to the Western fanbase even if it failed to be a mainstream hit like the first Gundam.

but zz is fun and has cool suits so watch it anyway.
