Where did the "biosensor" explanation come from? I don't think it's ever mentioned in either season of Zeta. I thought this was just supposed to be Newtypes powerscaling to have Bleach-esque spiritual pressure.

The novelizations that were being written simultaneously with the show. Also Ideon, Dunbine, and L-Gaim all have soul power shit so people weren't that surprised when the next show in Tomino's timeslot had that too.

Novel and TV guidebooks aside, Emma just cryptically tells Kamille that the Zeta Gundam has the power to take in people's souls to power itself up before dying, so even the show establishes the machine is causing the weird phenomena

Zeta novel had it, but that's technically its own thing.
Other than that it started being mentioned in databooks and mooks and shit before ZZ appeared in its own show so it's not some later retcon or whatever.

Where did the Kamile didn't design the Zeta Gundam/"Zeta Project" retcons start anyway?
I assume it comes from the book "Mobile Suit Gundam Official Creative Works Anaheim Journal U.C.0083-0099" since that's what the Gundam wiki sources for the development section of the Zeta Gundam article but are there any earlier examples of this happening?

Yeah, Z-MSV is the culprit with its Prototype Zeta. So, like, right after the show. It's also probably why it stuck since it's so old. The Prototype Zeta (with no transformation, which is what ends up credited to Kamille) supposedly was finished even before they could steal the Mk2s.
