Everybody treated her as a doormat because of past experiences, so she had to assert herself forcefully. Also, having lived her entire life as a shy mare, her newfound assertiveness must have felt like a superpower, and it went to her head.
Nevertheless, it didn't even take her 2 full days to realize that she was wrong to act that way she did and renounce it, so I don't think it's fair to say her kindness is fake or shallow.

Plus, the explicit reason the rest of the mane 6 were able to recreate Rarity's original designs was specifically because of Fluttershy's sewing knowledge. If Fluttershy actually didn't know anything, she would have been useless there.
Honestly though, this entire conflict could have probably been avoided by Rarity showing her friends the designs before making the dresses. The more I watch Rarity episodes, the less sense her business starts to make. I thought she was a custom clothing maker, but she doesn't actually seem to do custom orders. She seemingly just gets an order for a garment, makes it in what ever way she sees fit, then sells it as is. It actually probably wouldn't be a very good business model if the plot didn't demand that Rarity's designs be universally adored and considered the best thing possible by everyone who sees them.

To be fair it is a cartoon for children produced in the US where being unsuccessful at work/business is considered evil, so all the main characters have to be successful at their professional pursuits, and realistic business practices are superfluous for little girls' ability to enjoy the cartoon.
