Celestia didn't wield the Elements of Harmony on her own. She and Luna had four friends to wield the others, Luna bearing the Element of (insert headcanon). Luna slowly went nuts and was no longer the bearer of (headcanon), but was able to be replaced by a fifth friend. After Luna's banishment, Celestia's five friends eventually grew old and died, hence Celestia "lost her connection to the Elements."

We only saw it in a drug trip and a story book, and G5 showed that ponies are bad at keeping history.

Alicorns have more magical bandwidth. Celly and Luna could each handle multiple elements at once. Twilight's an alicorn too but she's the princess of friendship specifically so it makes sense she needs friends to wield the elements.

A pony must possess the moral quality associated with an element in order to wield it. This means that by the time of Nightmare Moon's banishment, Celestia was kind, generous, honest, loyal, magical, and laughterful(?) enough to accommodate all six at once. I don't see why you'd want to invent five other ponies from whole cloth just to deprive Celestia of being the moral ideal of Harmony.

This is an interesting topic, OP. The show was relatively explicit about Celestia+Luna, and then Celestia herself wielding them, but you're not crazy for entertaining the possibility of there being unsung heroes.

Luna is Honesty, as what may be more honest than a dream?

Celly is more of a Laughter material, see Grand Galloping Gala. The Magic bearer of their group was nobody else but Clover the Clever. Technically she's a lich but it doesn't feel right to call her that. She's still around during G4, owns a tiny antique shop in Canterlot and changes names every 50 years to stay under the radar. And their Kindness will forever be unknown as he or she sold recognizability to fairies in exchange of something important.
