pay attention to top and bottom end clarity, that's what the majority of different materials and shapes will change.
based on mostly true boomer lore, having a solid wood top is most important for resonance. the back is nice to have solid (non-ply) too, as it is the secondary resonating surface but it still has much less impact than the top. and for the sides, literally no one cares except for the boomeriest of boomers. ply is fine for sides. spruce tops are stronger so they can be thinner, which makes them brighter than most other tops. side and back wood again aren't as important here.
tl;dr:
try before buy (ergonomics is arguably the most important thing here)
listen to someone else play it
solid spruce top (if you like how that looks)
solid wood back (if in your budget)
ply sides
make sure to smell all the guitars too because the smell of acoustic wood and wood glue makes me pop a boner

Paul cares about what sounds best. He's always believed that what matters is the sound, and the cost is whatever it has to be to achieve that. That's what he's always told me, and I think his instruments have always reflected that.
You may not be able to hear the differences, or afford them. But the reason (imo) Paul's been so successful is he's always put the quality of his instruments first. That's given his company a consistent direction over 40 years, rather than simply chasing whatever will maximize that quarter's unit revenue.
I think that's also exhibited in the insanely high quality the company has brought to their budget SE line. A Silver Sky SE, out of the box and under $1K, sounds every bit as good as a pre-CBS Strat costing 25x as much. That's not merely remarkable, up until now it was considered completely impossible.
And that happens not because of a desire to maximize revenue but because of a desire to get the best instruments into as many guitarists' hands as possible.
I admit my view of Paul may be shaped by having known him for a long time, but his guiding philosophy has always been to make the best possible instruments, and if he did then the company's success would follow. I'd say history has proved him right - and guitarists everywhere are wildly better off for it.
