What happens to the screens in new cars as they age? Do they only last a few years like tablets/laptops do?

Of course. The 6 gorillion fluxless soldered joints in a modern shitbox infotainment system will corrode and rot in a decade or two so and they will be completely unsalvagable because the infotainment is deeply integrated into the basic functionality of the car. In 50 years, there will be zero "classic cars" from this era aside from a few autists that will be running standalone ecus just to get them to work.

I drive a 2000 Prius, so over 25 years old now going off its manufacture date. The screen is still going strong. Even in the extreme cold it doesn't dim on start up. Can still see my power consumption, the radio, and even control the tape deck from it.

2000s electronics are generally a lot more simple and robust than modern auto electronics. I've done a couple 2nd gen prius dashboard re-caps and they have good, thick pcbs with wide traces, fat solder pads, and are generally a lot more durable. The new stuff is made on paper thin boards with shitty chink chips and tons of tantalum caps that are ticking time bombs.

they generally use "automotive grade" components, meaning they will(should) last longer than a screen on a laptop.

but yes, its a concern for sure, especially for fancy cars that use custom screens with weird shapes/resolutions/curves and integrated mutliscreen glass panels.

on the flipside tho, many/most cars use pretty basic screens that are very easy to replace, even if the og part is nla. eg tesla's have regular ass flat 15/17 inch touchscreens. automotive grade probably, but fundamentally its nothing special, basically existing laptop panels with stronger glass and maybe some uv coating. at any point in the future, you could probably replace them with any available panel of equal size/res if you're willing and capable to figure out the connections and do the soldering.

but really, the most pertinent question is, will anyone give a shit?
m539 on youtube has done some a couple episodes refurbishing the instrument clusters on old bimmers. on one occasion, also the screen of the infotainment. he could do that because people loved and cared enough about those cars to do the work. and there are enough of them that its economically viable to offer kits and custom replacement parts for them long after the mfg stopped making them.

but for modern cars? those soulless pieces of shit? aside from the occasional rarities, porsche gt3s or similar, who the fuck cares? people love the old bmw 850, but i doubt anyone cares about the modern 8 series. people love the mk4 r32 gold, but do you really think anyone will give a shit about the mk8 golf R in 30 years?
and if nobody cares, nobody will bother to work out how this stuff works, what to replace NLA parts with, how to connect them, etc etc.

With all the modern networking and VIN handshake security checks between components, replacing new parts, even if you have the component itself, is likely going to be a nightmare unless you're a /g/ wizard. You're right, nobody is going to be putting the work in to figure out bypassing network checks in a 2024 CRV.

How come all new cars have such dogshit interfaces on their screens? Cluttered, ugly, few features but at the same time managing to feel bloated.
Can you even swap them out or are they basically going to be the equivalent of cd players in 10 years?

The original touch screen for my car controlled a number of the climate and radio functions, much the same as a new car. In order to update the display and radio I had to source a lower trimmed models radio waterfall cluster. Short of a bad firmware update I expect the new infotainment a to last a pretty long time.

I have one of those LCDs with the preset display segments. If it goes, my radio fails and I replace it with an aftermarket $40 head unit and a $10 harness adapter. Pretty awesome.
