The weird thing, in the miltiary we had these old daf trucks from the 70s that they still used in 2015 those have no cat but really smell not that bad

So who has deleted their cats? I've had mine stolen 3 times in the past 7 years in Chicago. So my current idea is to just sell my cats before someone else steals and sells them. I'm replacing my old cat-less car with a Infiniti QX80 and found some aussie company selling secondary cat delete pipes for like $400 shipped to the US. The primary cats built in to the headers and I dont think there is any easy way for them to get cut out.
So for the secondary cat deletes, will a spacer on the rear O2 sensor work to prevent a MIL light from coming on? Do I need a spacer with a small amount of catalyst? Will the ECU know i'm trying to jew it, and be forced to spend the money on O2 sensor simulators?
The only vehicle inspections we have here are ODB2 based ones which just check if your MIL light is on, and they even have self serve kiosks now, so its not like anyone from the government will ever actually look at my exhaust.
