These guys live at like 10000-12000 elevation. Their bodies are literally built differently. Pro athletes travel to high altitude to train since it helps oxygen in blood or some shit (now they simulate it in chambers though), these guys literally were born there and live it daily.

The Mongols actually cooked their meat by dragging it on their pack horses behind them. Each mongol would have 5-10 horses among them and they'd use the pack ones to drag the meat or carcass from fresh game and cook it with friction.
