Bring three times the film that you think you need. Then slip in a lot of what you think is 1 stop over and under exposures. This will ensure you've got a batch of good exposures.

Also watch the aperature. Normal people don't want a DOF so thin that the tip of the nose and ears are "beautiful creamy bokeh". Having the eyes in focus isn't enough.

Shoot with both digital and film, if you're incompetend with film then you can just use the auto modes on digi and edit it to look 'filmy'

Practice with someone else before hand so you know what you're geting in to and then try to replicate the same conditions (time of day lighting etc)

For long exposures you can get a head brace. You position it behind the subject so it is out of view and they rest their head on it. It's what the wet plate photographers used to use.

Do not use a wide angle. 50mm and up make people look better. 80mm and up for medium format.
Use BW film. People love bw and don't realize it. It hides a lot of skin imperfections.
If you've got a camera that shoots squares (any 6x6, Zeiss Ikon Tenax) try some shots with that. Instax or Polaroid too if you've got one of those systems.
And don't open the aperture too much. F2.8 is plenty fast. Try to have the whole face in focus. Use the background to create subject separation instead.
