Man, I always get flustered when I'm asked that. I guess the fire, enclosed, but not pitch black; the redness, the warmth... I have a difficult time putting it into words.

Gonna make some smash patties with brioche style buns and of course I'll toast the buns. Homemade sriracha truffle mayo, of course I use american mayo then pickled onions on it and tomato and of course I toast the buns, nobody likes untoasted buns. Any questions? also thought of throwing in a few slices of American cheese, it's the only cheese that belongs on burgers, maybe also some pickles. What would your dream burger look like?

Your pic made the burger look tasty. Nicely done.

>>4465528
Smash burgers are great. I also really enjoy big half pound burgers smoked at 225 until they reach a med rare internel temp. You get the grill really hot and give them a good sear afterwards. Oak or hickory works well. I had a smoked blue cheese that was amazing on a burger. A good american cheese like boars head is still better. If you want to go all out you can make your own american cheese with high quality sharp chedder, sodium citrate and chopped pickled jalapenos. Tastes like nacho cheese, but infinitely better. Delicious.

First, toasted buns - a detail too often overlooked but oh so crucial. The surface should be crispy golden brown, the inside soft embracing, like a caressing of butter and heat. An invaluable vessel that keeps the taste's alchemical masterpiece in place.

Then, the meat. A perfectly tempered and gently fried or grilled piece where the maillar reaction creates a deep, caramelized surface. The fullness of a high quality steak, the juiciness of a smashed burger, the smoky umamine from a well -hung entrecote - each variety carries its own poetry.

And finally, the wine. A cool temperate Barolo, a structured acid or perhaps a burgundy with silky elegance. The acid and tannins lift the fat, the fruity tones balance umamine and a light spice reflects the burnt surface of the meat.

If you only have cheap beef a smash burger is better, but if you have excellent quality beef then a smoked medium rare burger is better. Sorry this is just the simple truth of burgers. Wood/charcoal fires always produce better tasting meat.

The hands are blurry because cat was "praying" for treats. The schtick wasn't the cat road the skateboard as much as it would go wherever the black tuft of fur was placed.

Here. Have skateboard dog. He actually was pedalling though so he's less of a poser.

Speaking of. Guys, how do I get better at photos? In this one I got:
> A bunch of harsh highlights
> A bunch of harsh shadows
> Subject and everything around is low contrast soup.
> Subject is a dog.
> Nothing is in focus (but in general my camera doesn't autofocus on anything furry).
Pic is my best attempt at editing for a print, and it kinda sucks.

Try and get down to the dogs level, get closer. You’ve included a lot of negative space, which would work if the background were interesting, but it’s not. The lighting is harsh, but the photo just reads β€œI saw a dog and took a photo of it at my eye level from several feet away”. Sometimes lighting and location is just not conducive to a good photo.

No offense, but don’t waste time polishing turds, this is not a print worthy photo.
