I don't use soap. I use rock salt and olive oil but it's a pain the ass. I usually end up having to heat the old food in oil to loosen it and then scrub it with the hot oil.

not really an exact science, just make sure the pan doesn't have the opportunity to start oxidizing by keeping the iron sealed with the oil

Anyone else coming into these threads and being convinced by insecure internet tough guys to buy cast iron is wasting their money. Fuck cast iron and get stainless steel. You won't be able to tell the fucking difference because you don't even know what a fucking heat capacity is, and it'll be less of a pain in the ass to "season" and clean

And you should ALSO have non-stick in addition to whatever the fuck. When you're using non stick properly for the appropriate foods only, it goes from lasting 1-3 years to 5-10 years.

You should. It's nice. Fried tomatoes go really well with eggs and bacon. Just cut them in half, removed the green/white stuff, sprinkle with salt, fry them in olive oil for 2 mins on each side, and then add some basil or oregano when they're done. They become much sweeter and juicier, plus they're healthy.

I made some Mango chutney in a cast iron pan once, it stripped the pan of its seasoning completely. I always thought that tomatoes were the cut off for acid level, but honestly, even something like Worcestershire will strip seasoning.

That alone is annoying as shit to use cast iron. They're good for one thing, cooking at high heat and using a shit ton of fat to cook with, and to bake shit in the odd time. Pizza in a cast iron pan is really good.

Seasoning it basically means oiling it.
Clean and lightly oil the pan. Remove excess oil with a paper towel. Heat the pan in an oven, or failing that just on the stove top. Allow to slowly cool. Repeat several times. Oil gets absorbed into the iron and builds up layers. Just google it for a full description.
If done properly it will develop a natural non stick surface. Clean only with paper towel and oil. Never use detergent or hot water as this will remove the protective oil.

Big drawbacks are these. You cant use the pan for anything acidic like tomatoes, lemon, wine, as the acid will wreck the protective oil.. Which means you need a separate pan if you want to cook that anything with those sort of ingredients. You have to watch people in your house like a fucking hawk to ensure they dont fuck up the pan by washing it with detergent. Women in particular are fucking dumb and will still do that sort of shit even after they have been told. But they can be eventually trained with regular beatings.

Another fad diet. People will put all the work into caring for cast iron, and reap no noticeable benefits. You gotta be concerned about foreign pig iron too, you could be leeching lead into your food.

After years of scrubbing and sanding and seasoning cast iron I realized it's better just to use stainless steel. You "season" it by heating it up before putting the food on and that's it. No rigorous rust prevention routine. You should be drinking out of a copper bottle too and that's a whole other mess keeping it de-rusted and making sure it's real copper. In the end it ends up not being worth ir over supplementing copper and iron, then you get into the mess of fake supplements... You can't fucking win in late stage global capitalism.

Keep in mind that when these people say "non stick" they do not mean "non stick" like teflon.

What they actually mean is "it's easier to clean off than if you don't season" which is to say that it is still a pain in the ass and definitely worse to clean off than stainless steel or especially teflon.

I don't know why these guys puff up cast iron so much. They make it out like it'll suck your dick but if you ever actually use it, or you look into how to use it, there's a shitload of hassle for no benefit you're ever going to notice.

Be my guest, throw $300 away on a cast iron pan and watch how you never touch the damn thing 3 months later; that's the reality of 99% of people buying cast iron because you're just getting memed into this shit. If you don't know anything about cast iron, you shouldn't bother looking up where to buy it to cook with. It is a niche cooking tool and maybe something fun to cook with like how you might sometimes roast shit over a pit of fire on some sticks instead of using a frying pan and your stove.

"Non-stick" pans are just pans with a plastic coating. I just use tge same Teflon skillet i bought back in 2003. Been using it to fry chicken, bacon, eggs and make pancakes in for over 20 years and it's never failed me yet. Nothing sticks to it, easy to clean with a bit of soap and a wash sponge

anyone using cast iron without using butter lard or tallow is missing out. when i was younger i used to try building the seasoning using oil but oil just sucks. i remember being frustrated with how poor the seasoning was and wondered what did people use back in the day, hyper processed cooking oil or the fat of animals. so i started using fats and its never been better. i literally just rinse it clean thats it. seasoning so strong i dont even bother post clean oiling.

I'm a 3rd gen user of grandma's cast iron from the early 1940s. It a near perfect cooking pan. Exception is a small non-stick for a fast 2-3 eggs being it's a lot lighter

Cast iron has a lot of drawbacks. It's healthier than a non-stick pan. (If any non-stick Teflon shills appear ignore them. They just want you poisoned with forever chemicals.) But cast iron actually puts iron in your food and almost nobody needs supplemental iron from a non-food source. Everyone accumulates iron over a lifetime and it promotes aging and obesity.

Also the layer shitty old cooking oil you have to leave on the cast iron pan is just more unhealthy garbage. Stainless steel works fine.

the pot-iron they make modern pans out of are nearly-impossible to get slick, the new ones are much thicker and heavier but also much more brittle.
I have a hundred year old Wapak I use every single day and I consider it a blessing from God.

Other great brands are BSR (although their stuff will always be unmarked), Griswold, and Wagner.

They started adding the 'Made in USA' stamp in the mid 60s, if you find with without a Made in USA stamp it's therefore earlier. The more crude the logo looks the earlier it is.

If you find one, the only thing you should do to 'test' it's quality is confirm the bottom is flat by putting it on a flat surface like a tile floor and seeing if it spins, if it doesn't spin (and sometimes even if they do) buy it.
It doesn't matter if it's covered in rust, 100% of dilapidated cast iron can be easily restored, you literally just wire brush the rust off and slather it with oil and bake it to season them.

They are god-tier cookware. Op is probably a spamming bot but they're incredibly good.

the new one are extremely hard to season properly because of how course the pot-iron they use is.
Get an older pan if you can, use a slurry of oil and salt and heat the pan up for tough messes.
Op minimizes the process, sometimes you need to season them pretty significantly (multiple iterations of coating with a of a good seasoning oil--grape seed bacon fat--and then baking them in the oven until the oil/fat starts to leave a surface). You'll know you're doing it right when the excess oil is thick and sticky, just wipe it out with a towel, or bake it longer until it gets slick.
Getting the seasoning right is the hardest part of owning a pan but once you get it right it's so good.

you can also put the pan in a bath and use a car battery to induce electrolysis to remove the rust, that is less effort and removes 100% of rust.
When you wire brush the rust out, you will wipe out a bit of rust during the seasoning process.
The cool part is iron is good for you, if you end up eating some microscopic pieces of rust, it's fine.

Cast iron pans are great habit building items. I always clean and oil before I cook. After I cook, I leave the slop in the pan with a cover until I'm ready to cook again. I just hit it with some hot water, a dab of detergent, and hit it with the rough side of the sponge for like 5 seconds. I throw the whole mess out my backdoor into my backyard. I throw the pan on the stove, wait for the water to boil off, then put on a good olive or avocado oil. It's become a habit, I enjoy the process.
