I shop at aldis too, I'll help you out. 1 family size pack of chicken thighs, bone in is cheaper, but my roommate hates those. 5 dollars. heavy cream. 2 dollars. some kind of seasoning. 1-2 dollars (aldi has shit seasoning variety I don't know what you got) chicken stock 1 bottle 2 dollars. this will get you 2-4 meals depending on who you're feeding. season the chicken sear the chicken, cook it through, then add in the chicken stock so it barely doesn't cover it, probably half the bottle and add seasoning again. bring to boil then reduce heat to medium low and stew for 2 hours with the lid onto your pot or pan. then, you add the cream, and stir it in. 10 minutes to incorporate, and you have chicken fricassee for a price of like 11 dollars for a weeks worth of food. It's good stuff, trust, but does take a while. Add onions and potatoes if you want to make it extra. I don't recommend keeping this as leftovers, you'll want to make it every day, and you probably need like 3 things of chicken stock if this is your week's meal. Cream should last you maybe. TL;DR, you bought overpriced crap junk food, why are you surprised it's expensive? The half pork loin is ridiculously cheap there for what you get, buy that.

To make fries? No it's way more work than that to get a fry like item. You have to cut and soak them to get the starch out. Then blanch them in boiling water. Drop them into ice water. Dry they off. They oil or air fry. It's a huge pain in the ass for a single serving.
I use to do an entire 5 to 10 pound bag and freeze them after the blanch/ice stage. Anything less than that full annoying process you're getting a boiled potato stick, not a fry texture. It's why most just buy frozen.
