toby didn't remove mantlle just because we figured out what it was meant to tell us, in the same way he won't change who he wrote the knight to be just because we figured it out early
it's the same thing: you expect dess to not be the knight not because it doesn't work, but because it's "the obvious choice" - much like if you'd known bits and pieces about mantle before chapter 3 came out you never would've assumed it was about snowgrave because it would've been 'too obvious'
it's just a shit way of digesting stories to expect them to NEVER be predictable - a good mystery allows you to figure out the solution before the end, not for 100% of readers to go "WOW! I never could've expected that one!" because that's just showing you didn't make a solvable mystery
