Something people tend to forget is that those games have a very long development time, they get greenlit when something is trendy but by the time it comes out, it's already been 4-6 years and cost several millions so it's very hard to just can the project by that point since you're throwing that money down the drain.
The major problem comes down to AAA companies catering to investors, because they'll always demand the "safe investment" which involve following trends instead of being creative.
The vidya industry should have nothing to do with investors, vidya development never have a reason to cost several millions dollars to begin with, let alone millions you have to borrow from someone who expect you to return that money tenfold.
