It's prefectly fine so long as you don't care about the aesthetics. They'll plant seeds kinda randomly and it's hard to know how many villagers you actually need working to get it all done.

But they will use your highest level seeds appropriate for that Village. It's perfectly valid to have the NPCs do all the work. So long at you don't care that you'll have tomatoes growing beside onions in the same patch.

Sakuna is an exception regardless of what you're doing though. No matter what, you should hire Sakuna and leave all the rice business to her (Maybe you can harvest it with Matsuri's weapon to ensure a level up, but Sakuna will do that too). She's extremely useful, because you can guarantee that she'll only be planting and harvesting rice.
