The Greybeards don't write shit down because:
A) They're Nords and Nords rarely write anything.
B) They learn the words from Kyne. It may be the Dragon's Language but those are Kyne's words, and if you listen you can hear them in the wind. That's why the Graybeards just sit up on the mountain all day listening.
As for learning from the walls, I'm not sure. The old Nords certainly knew the Dragon Language so there would be records of them in the tombs, but as for why the DB can just idiot-savant the words idk if there is a good lore explanation. Probably just a simple game mechanics decision.
Maybe Akatosh gifted you all the knowledge already and the walls are just "reminding" you?

I've had mixed results with loot but it has saved my ass a few times. The last piece of advice, should you need it, is putting your load order in SSE and finding the last mod that is modifying your lighting effects.
