That's just silly, the enigma of Myst were crazy because it didn't have to sustain a whole setting. And the combat/adventure hungry playerbase would not like that kind of enigma.

What you describe would still be very costly, you need each planet to have a minimum of content locally.

At most I could imagine a plot like this
SG-base => planet => discovers new coordinate => need to go back and force to previously discovered planet to talk to NPC and solve stuff.
Then you'd have "trouble" like Go'uld using the gates so you need to fight them there, or needing to contact the Asgard from another planet and convince them to help, fetch quests.
It would involve making a big change with factions who are already using the gates themselves to commerce.

Outer Wilds is a VERY peculiar setting, it rely on moving around a lot and not needing dialogues.

As said above, it would not be suited with talking to people to gather information.
