The LGA1851 platform isn't worth the money (unless heavily discounted), it will only support Arrow Lake and Arrow Lake-Refresh.
Arrow Lake is fine if you need an Intel CPU for work, it's underwhelming for latency-sensitive tasks like gaming.

If you can get a Newegg Arrow Lake i7 + motherboard + 16GB memory bundle for $400, I'd say it's a nice value option.

This is why gamers don't want to build Arrow Lake PCs.
The Z890 board and 8200MT/s CUDIMM memory will cost you around $550 before taxes, and the Tomahawk isn't that good for manual memory tuning.
