My other answer is less satisfying but is likely just the cold hard truth - From/Miyazaki didn't want to sell a new ending for $40. Whether they would have foreseen people complaining about it, or didn't want to bother with the logistics of implenting a new ending to the base game, its just not something they've ever done barring SOTFS, which was a re-release that was seen as a scummy practice at the time.

First, erasing causality means that Miquella would have founded a new age free of the influence of the past one, which his circlet as the basis of it. We don't know if the Elden Ring would be involved at all.
As to why he was so hellbent on divesting pieces of himself and severing his ties to his mother, Ymir says this:
