Tbf, they probably would've spared hans, godwin, etc for purposes of ransom or a means of leverage over the nobles who are opposed to the league of lords (all the better to break them before Jobst's army can arrive), but people like Zizka and Hynek are dangerous, considered honourless, and don't have much in the way of familial wealth to ransom (zizka is a noble but his estates were essentially three buildings and some cows)
It makes sense to spare at least most of the surrendering people just so people will surrender next time you siege a thing - irl sigismund seethed at some french knightly allies for massacring surrendering forces, because his ottoman enemies, upon finding out about the massacre, executed something like a hundred nobles without ransom. But yeah, Hynek's decision was probably the most sensible choice and Zizka mentions this later that forcing the praguers into an immediate assault was massively to the benefit of the defenders
