FE7 (Blazing Blade) has a comprehensive if long tutorial that teaches you almost everything.
FE8 (Sacred Stones) is considered a pretty easy game so not a bad place to learn what conventions work and what don't.
FE13 (Awakening) was a popular entry point for a reason. It's difficulty is just right for new players imo and has other elements to keep you playing if the gameplay doesn't immediately entice you.
FE 14 is technically three games and of those games Birthright is basically a more refined Awakening so also a good place to start.
FE17 (Three Houses) is a bit controversial as a starting point since it plays pretty differently from the rest of the series with the Monastery being a pretty involved thing outside of combat. Story but especially characters are considered strong.
FE18 (Engage) was made with new players in mind and features flashy gameplay mechanics to make it more appealing. The story is divisive but it is very fun to play. Since it features characters from past games it's also a pretty logical jumping off point to the rest of the series, though it does spoil a few surprises of older games.
As far as the main grid-based turn-based strategy goes every game pretty much plays the same as far as stuff like damage calculation and hit rate goes.
