Yes, plenty of people like instant gratification with no real substance. And I'll even admit it's fun for the first few runs, but it gets old really quick because it lacks the real variance and engagement that simply building speed naturally via interacting with level design brings.
It's kept around because it's piss easy to develop for (when you're not making Unleashed style stages anyway) and lines up with what most people think they want from Sonic, which is "gotta go fast xDD" and it makes open world Sonic actually work when you can't/won't make real level design for it. They almost bucked it with Lost World but that flopped so they immediately went back to the boost formula after, which is a shame. Lost World had some good ideas with the parkour mechanic which kinda came back with Frontiers but that's probably more of a coincidence since Frontiers was obviously just ripping off the climbing mechanic from BoTW. I think the boost could work as a compliment to momentum based platforming in some way, but replacing it entirely with an instant fast button just dumbs down the gameplay too much for my tastes.
At any rate, I could go into the autistic nuances of this and that regarding the boost mechanic but the tl;dr is: Kids grew up on it and love it, and Sonic Team is very comfortable developing games around it now. It's not going anywhere any time soon.
