If you're truly interested in learning Linux then I would recommend you dual boot. Use Linux as much as you can and only boot Windows to play those EAC games.

You probably already know about it but it's incredibly useful to check compatibility for games or potential fixes for problems you might have.
You'll be surprised how compatible linux actually is with almost all games these days. Search a few games that you enjoy/want to play and I can almost guarantee that users on ProtonDB will report them to work quite well, a lot of times without any tweaks at all.
Biggest problem with gaming on linux is that some big multiplayer games don't work because of anti cheat.
