If Sushi wanted to have good combat while still having something cut throat low health combat it would've had a lot more emphasis on enemies blocking attacks and not being so easily put off balance and having guard bars you can break super fast.
Brought it up earlier but I played a bit of way of the samurai last night, a game from 2002, and it immediately presented a more interesting combat system where tough enemies apparently love to block your heavy attacks while light attacks deal much damage, not just that though but when your are defending attacks you have to do a specific input afterwards to "push" the enemy off balance to actually get a guaranteed heavy attack but again you have to pay attention to the attacks and know when you can actually push back i.e. an enemy can do a single attack or do a 3 hit combo, I imagine some attacks probably can't be pushed back at all to punish and would need a dodge.
I don't know how later games evolve it but it seems like there is way way more emphasis on paying attention to your enemies compared to sushi combat where you have dodge into OHK counter, parry into OHK counter, and even one stance will fucking AUTO COUNTER specific enemy attacks WHILE YOU'RE ATTACKING
