The popular ones (aka the ones anybody knows [aka Hololive]) aren't really streamers but singers and artists. Hololive in general only considers a girl a "streamer" until their first year is done, since making 3D models is expensive and nobody wants to invest in someone who'll just leave in less than a year.
Though it's not hyperbole to say there are over 9500 known vtubers out there so they're basically just streamers for 99.9% of the time.

>and then a real woman pretends to be an anime girl and somehow they become the most popular things in otaku culture.
Concerts. Hololive has one grand concert over the course of three days (Holofes) where everybody in the company participates. Then hololive vtubers have varying amounts of concerts (ranging from birthday concert lives to real concerts).
Earlier this year they even had concerts in California, and some had to do 11 concerts last year due to world tours.

Suisei's songs are always a banger.
Not sure why the rest were chosen. Even Reflect isn't particularly great.
