Didn't you play the DLC before? it has Great Katanas which are just what the name implies. No int/faith based of these thougg, just infusions which are best when mostly faith/int anyway.
Feels like you need a minimum requirements build + int or faith, so stick to 14 STR and around 20 dex for that and then pump either Faith or Int, so you can wield a weapon and off hand a seal/staff, i'd recommend faith since incantations are more fun to use all around
