Most of general gameplay feels slippery and off. Spyro's speeds never seem to be quite right enough, especially in tight control moments like speedways or flight. And that's just himself; the extra characters in 3 are all really fucky to play besides Agent 9, who got reworked into more of a budget ass perma-aiming Ratchet clone.
I think it took until Crash 4 for Toys for Bob to get their shit together since they were ones that took the reins for Spyro and Crash while VV fucked off to Tony Hawk til their demise. And even then Crash 4 has some REALLY stupid things like jumping nitro crates that actually can clip you.

If a remaster or remake keeps the spirit of the original intact, or even has classic mode options so people can still enjoy the game(s) like how it used to be, then hey. But when you get stuff like Crash and Spyro, Demons' Souls and Shadow of the Colossus, where drastic reinterpretations occur that strip out much of the old art and intent, it gets really fucky. You can sell me all the quality of life in the world and I'd still regularly prefer the old versions unless you straight up just 1:1 the old game "as you remembered it" right, like Croc or the Quake remasters.
