xorg is a package group and installs a fuckton of bloat if you just choose "install all". startx (from xorg-xinit) is just a part of xorg and it's useful to have it as a separate package if you don't want junk on your Arch system.

One is not better than the other. They cater to different use cases. Me, I would never use Ubuntu except from a live USB stick. Reasons being that I'm used to Arch now, its package manager, I like how easy it is to install a minimal system, and I don't need a USB stick to install on a different disk or partition on the same computer if I already have an Arch installation. and I don't have to disable or configure a ton of bloat. I only install what I want. The rolling release model is simple and everything is updooted at the same time to the latest stable version, any time I want, and reboot when I want. Wangblows could only dream of this succinctness and simplicity.
