Have you never seen a gnostic story? I don't even like gnosticism but you're retarded. Yes, the Dessendre family is in the wrong. No, the game doesn't depict it outright since Act 3 (when you learn about it) is presented from a Dessendre point of view. Act 1 and 2 should be enough for any sane person to come to the conclusion that the little demigod family is evil.

I think most everyone got "good enough" at parrying and didn't have to worry about buffing defense too much, since if you're not an ultra casual, you probably trivialized the combat's difficulty by the time you get to the final boss. Simon is the filter - either you got-gud and beat him with parries, or you said "screw it" and cheesed with gommage/stendhal. Guys like the one in the video are definitely the outlier.
